When I shoot with the Olympus I shoot RAW+JPG. Most of the time I prefer to start PP with JPG. I use Photoshop and transfer some pixels from green and blue channels to red.

If you're doing any sort of PP involving color or brightness/contrast shifts, you want to use the raw file with the great bit depth.  Your end output is an 8 bit jpg - any manipulations of a source 8 bit object will conclude with less than 8 bits of information - lost fidelity.  The raw may have 10-14 (the higher end potentially being marketing, but still well more than 8).

I use the jpgs to sort out the crap from the obviously good from the maybe.   Canon jpeg generation is historically a strong point, so the great shots may be fine unaltered, if no white balance concerns.  ETTR (expose to the right), deliberately overexposing slightly is a norm for canon sensors, for best results.  This may not be true for the Olympus.  But you saw from his example how much detail is lost in the downgrade to 8bits, and its really easy to retrieve in the raw tools with PS.   (And easier than that with Lightroom)

I also observed that the brightness in the pictures after uploading is some more bright that the original.

This could be a color space concern.   Is your PS set to save jpegs in srbg or Adobe?  And does your camera have a choice?  This is another irrelevant item with raw editing.

Or you're doing level corrections and its generally upping your exposure.
