How do I recover colors during soft proofing that shift from the original so dramatically that they basically ruin the image?

When soft proofing an image, sometimes the colors don't shift much at all, but sometimes they shift pretty dramatically. Right now I'm working on two specific pictures, one with a lot of brilliant greens (the greens are sun shining at an angle on grass) and one with a lot of a unique blue (a twilight HDR shot of the mountains) In the first picture, the greens turn almost yellow, it ruins the image. In the second picture, the blue's dull out quite a bit which doesn't make the photo pop nearly as much.

Are some colors just not reproducible for certain print processes?

And if we're fine tuning an image for a specific print process, would it be detrimental to just make a soft proof copy from the get go and then edit the picture from there?
