How do i get into a video mode where i can see the LCD panel and adjust my shutter/aperture/iso and be done with it. I would also like to be able to see the shutter speed/aperture/iso as its recording and maybe change it as its recording just as i can with my canon DSLR.
I don't have a G7 (I have a GX85), but it also has a movie mode (AKA Creative Video Mode) on the mode dial. It's the symbol with a movie camera and an "M". This is the only mode that actually controls all the video settings.
Note that in all the PASM modes on the mode dial, you can still press record button, but the settings you choose do not effect the video (rather video is full auto).
Once in the Creative Video Mode, you can tap the top right corner on touch screen and it'll allow you to switch between P A S M for your video settings (alternatively you can go in Menu > Motion Picture > Exposure Mode). See page 126.

You can then change aperture/shutter speed/ISO etc as you do with stills. You can also use the touch screen menu on the right side to change these settings if you want to minimize noise from the buttons.
