Metering modes? FZ2500

Metering modes? FZ2500

Keep trying to learn more and more. Recent trip to Rocky Mtn. Nat. Park. Lower light conditions. I thought I had some great shots and they turned out not as great as I was hoping. I tend to shoot allot in P mode. I am not sure but am thinking, perhaps, I had the metering mode on the first one, which I think is "Measures brightness of the whole screen). I was trying to take pictures of some Elk in lower light and any little movement they made was reflected on the picture as a blur. Would it help to change to the center position or focus and measure the subject in the center of the screen or the bottom one that is for spot metering target? Note, the photo below has been worked on in Photoshop Elements.
