Underexposing for highlights.

I am looking to try out underexposing a bit with my portraits, when there are brighter backgrounds in shots. I haven't really done this before, and i shoot natural light.

From what i understand the 5d iii doesn't have the best shadow recovery, and i'd love any opinions on how many stops or 1/2 stops under, people feel they can go with exposure compensation, if shooting in aperture priority. Let's use a bright sky in background as an example.

There's going to be a point, where shadow recovery doesn't look good.

Thanks
