Fuzzy Landscape Photography: Advice Requested (Canon 80D)

I have a Canon 80D and am relatively new to DSLR photography. Like others, I have a great camera, but need some advice on how to use it.

In some cases I get great landscape photos and in other cases they turn out looking quite poor. I'd say in more cases, they turn out poor. Below are a couple of examples.

I'd welcome any tips...I'm guessing it's all my technique and not my equipment!

This photo is taken handheld-not with a tripod.  I typically use both the "Auto" setting on the camera, as well as the SCN: Landscape Setting

Exposure: 1/125 sec @ f/11; 18mm focal length; ISO 100; Canon EOS 80D, EF-S18-55 f/3.5-5.6 IS STM
