D7500 vs D500, old question - new prices!

Hi all, I know the question of D7200 vs D7500 vs D500 has been thrashed to death, I have read as many of the threads on here as I can. I am still trying to decide which way to go, I have a D750 that I use for my own photos and a D300s with an 18-200 that I use for work, I own a mountain bike guiding business so the D300s gets used by me and my staff (who don't know how to use it!), I want to replace it as the staff miss focus too many times with the D300s and I want a better camera and lens to get better photos to represent my business. I never shoot any video and don't plan on doing any, only mentioning that as the D7200 might get thrown back in the ring by someone!

I was close to being settled on the D7500 as the higher frame rate is helpful for shooting the fast action over the D7200. The D500 was out of my price range realistically as I want to replace the lens as well. So I was looking at probably the 16-80 and 70-300 with the D7500 as recommended by Thom as a good setup. I had a quick look on a grey import site I have used before in Europe and found the D7500 for 850 euros and the 16-80 for 800 euros BUT they have the D500/16-80 combo for 1750 euros (D500 body is 1250)! Eek, that has thrown me off!

I have the D300s set in aperture mode with ISO auto and shutter speed set to a min speed so I would do something similar with the new body so my staff can just point and shoot more or less. So bearing in mind I am on a really tight budget and I only want one or two lens as only I will be changing them and handing the camera to staff to use and I want to have the camera as a second body for me to use when I go traveling with lighter lenses which way should I go? I also really like my D750 layout as I have the U1 and U2 setup for sports and landscape so I could so something similar with a D7500.
