Assuming you mean "how does GDPR apply to contracts?": you should ensure your contracts contain no unnecessary personal data, and you can keep them for as long as you have a business need for them. If they show you retain rights to images, I would say that means forever.

I think insurance may a good thing if you can't cover the risk yourself.
