X-T3: what are the benefits and/or drawbacks of new EF shutter?

Hi all,

Not quite sure about the EF shutter mode. I've heard I should probably just activate EF+M+E and 'set it and forget it'. Should I?

I understand that E is for very high speed shutter in bright light. And I understand that the EF mode reads off the already exposed sensor and only mechanically closes the shutter, reducing shutter shake a *tiny* amount, and presumably reducing shutter lag similarly. Whereas M mechanically exposes and closes it.

Why not just have EF mode as the default then? I don't fully understand why I should/would use EF over M or vice versa. Is there any downside to using EF+M+E as an event and wedding photographer? (and therefore most likely using EF shutter 95% of the time).
