I still have my 5D but have not touched it since 2015. I guess it depends on which software is used. With the Canon DPP converter I was struggling a lot longer to find the color and contrast balance. Probably I could do better now in RawTherapee - at least the profile for the 5D looks fine. But with Fujifilm, be it the X-T1 or X-T3 and the RFC EX 3.0 (Silkypix) I can get instant rendering as I like it in most cases, with very little tweaks to contrast and color.

But yes, the 5D files still hold their own in pixel level color detail (not in dynamic range though). When I first got the X-T1, I noted that resolution is excellent (in RawTherapee) but with a slightly more "crumbly" layer over it compared to the 5D (that is the difference APS-C and 35mm). The Fuji cameras do need the lenses and focus to be excellent to get to that 5D impression of detail.
