ok I sorted out some of this stuff, still have as many questions as answers.

For my M50 you can upload 3, and only 3, lens profiles to the camera. Not surprising as they are each 16-18MB. To do that you connect via EOS Utility and go to the lens aberration settings which will let you choose from those you've already downloaded to DPP, or the  full list, which is downloaded from the internet every time you start. (from here if you're interested).

If you don't have a profile on your camera, the shooting settings for lens aberration are still available except the 'lens optimisation' one, so that must be what the profile is used for.  Either the camera does best guess for the other settings or the lens does have minimal information on it. Since it even works with my ancient EF 35 f2, I don't think it's on the lens. For some reason even if the profile is missing, the in-camera RAW post-processing still offers all options including lens optimisation, which makes no sense, but perhaps it doesn't really do anything. I think I'll try Canon support on this see if I can get some clarification.

In DPP you can indeed hit the little arrow in the lens correction box and pull in information about any lens you like, Canon nicely doesn't pull all 225 available profiles as that would suck down 3.5GB of hard drive. That list is updated every time you hit the button and indeed it doesn't yet have the 32 on it. The EF-Ms are at the bottom of the list, but you can also just hit the clear selection button and then select EF-M and only they are displayed.
