What is a reasonable level of pixel peeping for lens evaluation?

[This is a general photography question. I asked it on the Beginner's Forum but didn't get any helpful answers so I'm reposting it here.]

I enjoyed this video about how to find the best aperture on your lenses. The information was interesting and I could happily listen to this presenter read the phone book.

Let's say I want to do a similar experiment with my own lenses. Furthermore, let's say I know that my most demanding output would be an 8x10 print. And the camera is a MFT with a 16 or 20 mp sensor.

What would be a REASONABLE "zoom" level in Photoshop for viewing/evaluating the test shots? I assume that someone who knew they want huge prints might want to zoom in more than I would, with my less demanding expectations. Am I right about that?

Or: should I be making test prints, not relying on on-screen viewing?
