Canon 7D Mark 11 image quality after reducing image size

I wonder please if anyone can help me?

I've recently bought a Canon 7D Mark 11 to replace one of my Canon 40D's.

The camera works fine and the images come out of the camera looking nice. I have large Fine JPEG selected with a picture style of Portrait + 2 on the sharpness, this produces image sizes in the region of 5mb.

I mainly use my cameras for aviation photography and what I've noticed that when I reduce the image size down to 1200 x 800 for uploading to aviation websites, that the images look too sharpen, for example aircraft titles, doors , wings etc....look very jagged .

I use Photoshop CS2 to edit the images and I'm using exactly the same editing technique and settings as I did with my 40D's but the images look odd as mentioned above.

Could someone please shed some light on this very frustrating issue?
