Couldn't wait for Canon and Nikon so went with Sony although I was open to any system, any mount for full frame. My reasons being: Sony bodies are more mature and the available native lens selection seems to be getting better and better. 5 axis stabilization is also amazing. I was also an Minolta/Sony  A mount user. Sensor tech is brilliant with Sony but lagging a little with Canon.

I have big hands but I'm quite happy ergonomically, I used to fumble around for buttons on my DSLR button they are all in easy reach now and I find them easily. I admit I am used to Sony menus, but I don't need to menu dive very often at all as most of the buttons are customisable and then there's the custom Fn button menu too which allows you to assign upto 12 menu items for near instant access. This has been a feature of Sony cameras on A-mount DSLR and A7 series bodies for several years.

I have to say it's refreshing to go out with a small body and a 24-70/f4 lens. I take it with me more and more because of its lightweight nature, small size, full frame quality and my ever increasing less steady hands !

I would say if you are invested in Full Frame Canon glass stick with Canon (unless you do 4k video). The EOS R looks like an amazing camera that would satisfy a lot of people. I would be a little wary of a 1st generation camera so at least wait to you've seen a good number of reviews, marketing claims are one thing reality is another.
