I did turn on that constant feature for the monitor to show the live footage. Is the colorful LCD prerecord image a pipedream? If so, how can the simple monitor do the processing to make it look good?

Record in 24 or 30 fps, not 50 or 60, for low light.  It'll let your camera choose longer exposure times.
