Yes, this covers the exposure-part of the image. But with this method, your focus can still be off due to camera-movement (as discussed earlier in this thread) Much will depend on focal length, aperture and subject distance though, whether this matters or not.

Personally I find it faster to move the focus area. On my X-T1 I have the front f-button assigned to focus p[oint selection, and then I can immediately use the d-pad for moving the point. For me faster than trying to find the AF-lock button (I would have to take the camera from my eye to look where it is exactly  )

But I guess we all have our personal preferences/haptics, and my method is maybe not the best for other users. I always find it interesting to read how others use their camera, it sometimes helped me discover new methods, or re-evaluate my own methods.
