Ben is very experienced and helpful forum member !:)

All that he says about post processing is valuable .....

eventually one finds/arrives at  the workflow that renders a look which appeals to him /her based on what he/she is feeling!

Let me explain ...one may process a particular  RAW file  in one particular way and feel good about it ........some days/weeks later one may process the same file differently and still feel good about it !:)

so no one correct way ..to do it !

By the grace of canon the files already have such good color that no drastic intervention is needed most of the time .......only lense corrections ,distortion correction ,horizon straightening and some judicious sharpening & NR ....[auto WB is already v.good]
