Been there, done that. Wanna do it again.

As you are in the middle of nowhere, techwise anyway, a second body or second camera (like a bridge camera) is a really good idea. Along with batteries, charger, lens cleaner and more storage cards than you think if given to shooting video (you will be).

With common sense precautions you should be easily able to protect your gear from the elements.

I personally favor the travel zoom because I kind of think you will see that changing lenses is not the best idea, there is a lot of dust, and you don't really need uber long lenses. Particularly in Tanzania/Kenya you are more up close and personal with the animals then you might think. In most safaris you are up close and personal with your tour companions too who might assume they are entitled to their space in the Land Rover.

Mostly it is important to be in the moment rather than worry about taking pictures that in the long run will mostly be of interest only to you.
