Phoenix: Botanical Garden and State Capitol.

Tucson (@ 2hours from Phoenix): Desert Museum (actually an outdoor zoo/garden) with lots of native species and excellent displays. Sabino Canyon, Saguaro National Forest, Catalina Park and a lot more,

The Grand Canyon via Sedona either on the way there or the way back.  In Sedona Oak Creek Canyon is a worthwhile hike/walk.  There are lots of trails and backroads around Sedona as well.

It's a great place for pictures, redrock, mostly pine, juniper and cypress though there is some fir at the higher elevations.  Lots of succulents and cacti.

Take all the lenses you can there will be ample opportunity to use all of them.

Not an exhaustive list just what comes to mind.  Lot's of material on the web.
