This is more a matter of the GX7's extremely primitive auto ISO, rather than inherent limitations of auto ISO as a concept.

Pretty much any other camera has a better auto ISO implementation than older Panasonic bodies like the GX7. Being able to set minimum shutter speeds, or use auto ISO in M with exposure compensation, deals with the issue of the camera setting SS too slow/fast for the situation.
