The simple answer is that yes, the low spec MBP you are considering would indeed be sufficient.  In fact, as has been pointed out, it would be much faster than what you are using now in every way.  Plus you would get a much improved screen and state of the art interfaces (TB3/USBc).  Having the latest interfaces means that future expansion in storage, graphics and displays, could be external.  That said, you appear to be at the beginning of photography as a hobby, (which is why you have been fine with a 10 year old machine up to now), and as RAM, and the internal SSD are not internally upgradable, I would suggest, in the interests of future proofing your purchase that you consider 16GB RAM and 256 GB SSD.  But not absolutely necessary.

Lastly, you may want to wait a few months, as by the end of the year upgraded MBPs should be available, meaning you could get the better specs at a lower cost, or get a deal on the older machines.
