There are two general theories to exposure.  The older method is ETTR, expose to the right, and Protect the Highlights.  The newer method, Protect the Highlights, works well with modern sensors.

No sensor has dynamic range to meet high contrast situations.  In those situations capture  images to preserve the highlights (open the shadows in processing) or follow HDR procedures.

All of higher quality modern cameras have similar dynamic range, approximating color film of yesterday.
