How to focus properly when recording slomo with RX100?

Hi

So I've been using RX100 M4 for a year now. If the subject is set up by myself the slow motion shot is awesome but when I am out and want to record slow motion from say animals, the subject  most of the time is out of focus. I missed a lot of good opportunities. For example a few months ago we've been in Tasmania and this beautiful white eagle dived to pick a fish the cruise owner threw it on the water and even though I was pointing to the same location, later on I realised everything is in focus except the eagle itself. This wasn't first time.

So the question is what is the best way to record things in focus. Any tips or tricks please share.
