FF for bird photography vs APS-C?

FF for bird photography vs APS-C?

I'm looking at a D80 or a refurbished 5d MkII for doing nature photography, specifically birds. I know the crop factor for APS-C cameras will allow greater telephoto range, but I wonder if cropping & enlarging a FF shot would give the same quality as an APS-C shot of the same bird? Or would the FF shot look softer?
