How does Bluetooth help XE-3 w/Remote App?

I've got a loaner XE-3 for a few days in order to test out the Remote App with it and I could use some help here...

I'm familiar with how the Remote App works with the XE-2, X100F and the XPro-2.  All of those basically work the same way... start Wireless Communication on the camera, go to Settings on the phone (iPhone in my case) connect WiFi to the Camera, launch the Camera Remote app and control the camera.  But those models don't have Bluetooth.

How exactly does the addition of Bluetooth change/improve using the XE-3 with the Remote App?

On the camera, under Connection Setting there are BlueTooth Settings... I go through the Pairing Registration and my phone is paired.  But unless I ALSO connect WiFi to the phone, I am unable to use the Remote App.  On the phone, in the Camera Remote app, at the bottom I see the BT symbol and X-E3-00C1 "connecting".  But it goes on an on and doesn't actually connect.  Yet when I go to Settings|Bluetooth on the iPhone, it shows that it IS connected.  Eventually at the top of the screen in the app it says to "Connect to Camera via Wi-Fi" and that then works exactly like the other models which don't have Bluetooth.

So, what's the Bluetooth add to this?  What am I missing?

Thanks very much for any help.
