In studio, I put a patch of 96% reflectance white material at the subject's position and raise the power of my lights until it hits 250 in the RGB aggregate. This puts raw clipping in the red channel at under 2%, and the other channels not clipping at all. Perfect for the placement of specular highlights, and then everything else falls in line.

It sounds like you've got a good system now and, that it worked out outdoors, is a good sign that it's flexible.
