I had exactly the same decision to make a few weeks ago. Coming from an EOS 7D I looked for the best FF camera for architecture, landscape and portrait photography. After trying the Sony A7III I decided to go with the Pentax K-1 for the following reasons:

- The digital viewfinder was a total dealbreaker for me: the resolution is not good enough, on a sunny day it is too dark and there’s a lag when moving the camera.

- The camera is just to small for me. I don’t have especially large hands, but I just couldn’t get a good grip. When using a large, heavy lens the camera is totally out of balance. It felt more like a toy camera than a real tool.

- Too many controls are buried in menus. I need a camera I can handle blindly looking through the viewfinder.

- The image quality of the Sony is usually excellent, but sometimes the AI makes really strange decisions, for example regularly overexposing photos of dark trees. Even the old 7D handled this way better.

It comes down to personal preferences, but for me the K-1 is the better camera. If I wanted to go with Sony, I’d rather choose the A7R, but the price difference is not trivial...
