Why are larger sensors able to "gather more light"

The main reason stated for a larger sensor is better low light performance. But, if you are in low light, and you have the SAME SIZE LENS, shouldn't you be able to focus the available light into a smaller area using the same technology that Metabones uses in their adapters? I realize that one of the advantages of using a smaller sensor is the ability to use a smaller lens, and this can cause the total light gathering ability to decrease, but if you keep lens size constant, what is the remaining reason of the decreased light gathering ability of a smaller sensor?
