What kind of IBIS stabilization will it have, if not the 5-axis? 2-axis? How does that work?

The TZ100/ZS100 has 5-axis correction when shooting video up to 1080p. For 4K video, the TZ100/ZS100 has the “Normal” stabilisation (which corrects vertical and horizontal jitter) as described on p234 of the TZ100 manual. The fixed lens Panasonic cameras use lens shift rather than sensor shift stabilisation. I assume the ZS200 is the same as the ZS200.

A further comment regarding video is that in Dan Bracaglia’s First Impressions Review of the TZ200/ZS200 (here ) he notes that it has slow motion 1080/120p video capability. However, his comparison table shows the ZS100 as not having it, whereas in fact it does. Admittedly, that function is rather hidden away in the Manual Video mode setting. It's described on p125 of the TZ100 instruction manual. It needs to be selected ON in the menu for that mode. DPR’s original full review of the ZS100 also omits the 1080/120p capability.

So, as far as video goes with the TZ200/ZS200 it seems that there are essentially no changes.
