Benefits of image stabilization in layman's terms

Hi,

I'm a relative beginner who's thinking about buying a beginner's mirrorless camera. For various reasons, including price, ease of use and image quality, I'd prefer to buy the Sony a5100 or 6000. But I'm also looking at the Olympus om-d--e-m10 II, mostly because it has image stabilization.

My question is about the importance of image stabilization. Is there a way to quantify the benefits of image stabilization? Perhaps, "If you have a camera with image stabilization, you'll be able to shoot at shutters speeds that are _____ slower"? or something like that? If the a5100 or 6000 are, indeed, superior in IQ to the Olympus, will that IQ be wiped out in many conditions by the lack of image stabilization?

FYI, I'm 58 years old and have reasonably good vision, although I do need glasses in low light.
