Shoot the full video and use ffmpeg to extract images from the clip.

To extract an image for every second, use the command:
ffmpeg -i input.mp4 -r 1/1 output%03d.jpg
This will make 60 images from a one minute video clip.

Import the images as a sequence if you are using Premiere. For other video editors there are probalably similar options to make a movie from images.
