Canon has made in the past custom sensor sizes like the 1.5" for the Powershot G1 X II using the same oversize concept.
One reasonable question would be of economy of scale and that model proves that Canon has no problem running relative small quantity of sensor production.

I think the fact that the G1 X III has their standard APS-C sensor indicates that their days of making a unique sensor size for a new model is over.

Canon's stated camera manufacturing strategy includes:

"Through simple designs and reduction in the number of parts, we will realize cost reduction."

I suspect that Canon is currently more sensitive to additional parts and additional costs than they have been in the past.

Canon also states:

"We will not only make advancement in automated assembly technologies, but also change the way products are designed by assuming automated assembly from the start."

A nonstandard sensor size would just annoy Canon's robots.
