Video settings on Sony A6500 - befuddled

New Sony A6500. I can manage the stills settings. Am befuddled by the video settings.

I'd like to use both 1080p (not 4K) for normal video, and also be able occasionally to use a slow motion setting (which I'm told is frame rate 120fps and record rate 24P).

Can these be put into memory (M1, M2)? I've tried - at least with the slow motion setting - but failed. In fact, when I set the slow motion settings on the camera it doesn't record in slow motion. What am I doing wrong.

Also what is the difference between setting the mode dial to the movie setting versus simply pushing the red button to take a video?

Any help would be appreciated.
