Photographers often go to great lengths to "not" have texture in the water. The color temp is an artistic move - not an attempt to mimic what might be seen with the naked eye. Photography, like art, is not always about "realism."  I've seen photos in art galleries selling for hundreds of thousands of dollars which look nothing like reality. There is a place as in art for each.
