If its only a little bit of exposure adjusting that is totally doable with the JPG. Fuji released X-StudioRAW which lets you process the RAWs on your computer while the camera is connected which means you can adjust everything and get a result like its out of the camera; just shoot Raw+JPG.

FWIW the X-Pro2/23f2 is a great combination.
