I don't notice any changes to day to day usage.  The biggest difference is that without your password/PIN or biometric for decryption your data is basically completely inaccessible.  My recommendation is to encrypt and ensure your important data is backed up to a cloud service (like my photos all go to Google Photos).  Its the reason the FBI wasn't able to access data on the shooter's iPhone.
