Australia in August

I plan to visit Australia for about 4 weeks, but I can only travel in August, so that will be winter. I don't expect this to be a problem in the northern parts of the continent, but what about the south? I'd like to do some hiking and camping.

I am mostly interested in landscape and wildlife, so when reading the posts to another thread about traveling Australia I think, I might get a P 100-300mm; right now I use the Ricoh GR for WA landscapes (14mm equiv) and the GX7 for low light, macro and tele.

What places do you suggest? How about National Parks in NSW? I fear Tasmania is difficult to hike at this time of the year.
