I've done a fair amount of travel with various pieces of photography kit, and the one thing I've learnt over the years is:

Keep it small, light, and simple.

To me that means my EM10 + 14-42IIR + 9-18mm - all in a tiny bag with and extra battery and pocket-sized tripod.

No fuss, no frills, just unobtrusive and out of the way.

I have pretty much the same mindset, but maybe not quite so barebones. I used to carry way too many lenses, but over time, have pared it down to a very flexible set of 3 or 4.

GX8, 7-14mm f4 (not used too much, but always good to have along), 12-40mm, 17.5mm for low light, interiors and night shooting. Sometimes I’ll take an adapted Voigtländer 75mm f2.5 Color Heliar for architectural details and night time. The 75mm isn’t used a lot, but it’s small and light (230 g) and nice to have along when I want the extra reach. I always carry an UltraPod II for those times I may want it.

The 12-40mm and 17.5mm see the bulk of use. Everything fits in a Patagonia Stealth Atom Sling flyfishing bag along with daily travel essentials.
