I'd echo the recommendations of the others to opt for a model from the latest batch of Canon cameras (800D, 77D, 200D etc). Not that the image quality or feature set will be much different, but because Canon is now using an outstanding new sensor focusing technology (called Dual Pixel) in all of their latest releases. If you were to ever use the back LCD screen for taking pictures (or to shoot Videos!), then the autofocusing will be greatly improved over earlier models such as the 750D. Not that the 750D is a bad camera (I had great success with the yet earlier 650D even), but this new focusing technology is really worth the extra expense in my honest opinion.
In fact the new very compact SL2 has most of the features and controls of its bigger brethren (and the same great focusing and image quality), but comes in at the price of the 750D! Plus it's more compact to make it easier to bring along on trips. Pair it with one of the STM kit lenses and a small camera bag, or toss it in a purse (I personally like one of the top-loading hip bags).
Now if you do decide to pick up one of the older models that are still available, they will produce excellent photos no question. It just won't have the improved autofocus for Live View shooting or for Video.
One thing I'll add is that no matter what DSLR you get, NEVER use the "green" Auto mode. If you want full auto, then use the P mode so that you can set a single autofocus point. Your focusing will be so much better.
