The IIRC default setup on the G7 and I think also the G85 is that in shutter and aperture priority, the rear dial controls whatever you have prioritised, the front dial does EV comp. If you want to change that, you can, but there seems little need.

In M, one dial does shutter, the other does aperture.

Honestly, it is so intuitive that you never have to think about it.

Which dial does what is customisable, as is the direction of rotation.

For some reason, Panasonic made a significant leap in the ergonomics of the G series with the G7 and subsequent cameras, even though the G series was already pretty good.
