I think using sooc JPEG is for advanced photographers.  You really need to know your light in every situation and advanced exposure and metering techniques and even set white balance for each shoot.  Many compare it to shooting slide film compared to normal film.  So I'd shoot RAW and JPEG until you have learned advanced metering and exposure.  Same goes for me
