Regarding that nose shadow, what you need to do is set DR:auto and set your auto ISO to start at 400. Now the camera will take care of any shadow that gets too dark compared to the surroundings. It works beautifully.

Another tip is to use film simulation bracketing. I like to use Classic Chrome, Acros+R and Pro Neg Hi (to use when skin tones are important). If you prefer more lively color you could mix it up with Astia or Velvia, but I prefer to use the less saturated ones and rather boost color one or two stops.

I’d start with highlight tone -1 and shadow tone +1, and leave exposure compensation at 0. Then see how you like the output and adjust accordingly.
