Don't be too impressed with random stuff on the internet.  The self-contradiction you found is a clear reminder.

In the posted video, that guy never tried turning up the in-camera sharpness setting.  Instead he oversharpened in post.  You can easily see prominent haloes on the sign, which are caused by oversharpening. So he compared moderate sharpening in camera with oversharpening in later processing.

You can always sharpen video or stills in later processing. That does gives you flexibility, but it also takes time. Sometimes lots of time. It's also true for any camera.
