You are absolutely right, S5 is used mainly for portrait work actually it was created for this type of photography. What I don't understand is why you want a D700 when you actually think a small camera like a Fuji mirrorless can work much better (and I think it does). So the problem is that you would like to switch from Olympus to Fuji X and you don't know what to do? There are several posts on this topic - people who switched from Olympus to Fuji or the other way around and  maybe they can help you take the right decision.
