DIY Framing Very Large Photos...Need Materials and Technique Ideas

I've printed out some pretty cool landscape panoramas that I'd like to frame. One of my prints is 30" x 60", meaning a frame size around 38" X 68". Other photos are 40" x 40". I plan on laying up pieces of molding purchased from the big-box hardware stores and expect the gluing, clamping, mitering, jigging, fastening, and gold-leafing parts to go pretty smoothly. I've framed some big stuff before and understand how weight multiplies quickly as framing requirements increase.

However, this'll be the first time I frame photos this large and can't really find adequate materials to use as backing boards and matting. Can anyone recommend a substitute for conventional matboard? Or perhaps a technique that looks like white matboard around my photo? How might I fasten my photo to my backing board? Glass is likely too heavy (and dangerous) at this size, but how do I keep plexiglass from bending and bowing from my frame?

For the record, I've searched this site for answers and found next to nothing....I hope I'm asking in the right forum. Thanks, in advance for your ideas!
