Outdoor off camera key light/fill flash

i went to an outdoor portrait workshop this weekend and we used an off camera speed light flash at 45 degreas with sun behind the model. The light was maybe 5-6 feet away. We used a magsphere on the speed light. We used telephoto lens 100-135mm.  I'm happy with results I got but I'm trying to figure out what modifier I should use when I try this for myself. The magsphere isn't cheap. I've read a lot of advice saying a diffuser is useless outdoors. I just don't quite understand what the bottom line is on this. I've searched online a lot today and haven't found a sure answer. Maybe someone could help?
