I've searched online, but haven't been able to find an answer to this. Is it possible to turn off automatic gain control on the sound (AGC) in Canon EOS 800D/T7i? I know you had to install a special firmware on previous models to do this. Have they added this feature now, or do you still have to "hack" your brand new camera?

Canon doesn't call it that, but I think the answer is yes.

p. 312 of the 80D instruction manual, p. 302 of the T7i's.

Sound recording level can be set to Auto, Manual or Off (no sound recording). There are separate settings regarding "Wind Filter" and "Attenuator"  for wind and sudden loud noises that can be enabled or turned off.
