I made the choice between an m3 and m10 recently. I kept the m10 and sold the m3. I didn't like the feel of the main control dial or the rear thumb pad on the m3 and preferred the handling of the m10 with my little aftermarket 3m style stick on grip. I also felt the image quality was close in daylight shooting. That said the stripped back functionality is a draw back that limits performance that you can get out of the m10. This would be the same with the m100.

For me I'd now go the m6 for the video image stabilisation that it brings and more functionality. It shares the advantages of the m100 touch screen menu driven system and just gives more options that can prove useful.

The sensor based video image stabilization is actually a pretty poor solution with very limited usefulness.  Canon's implementation has a hard time distinguishing between movement from shaking and movement from panning.  I have seen plenty of videos where the feature was enabled and various objects turned to wobbly jell-o.

There are plenty of software solutions that can stabilize video post capture and tend to work far, far better.  The post capture options have the advantage of being able to analyze the entire footage from start to finish.  There are also plenty of options for fine tuning the stabilization algorithms, including the ability to define your subject.
