Photographing Ultra White Birds

It's difficult to get a satisfying photo of Egrets and Swans  because they are just too white. Their feathers come up looking incredibly white and fuzzy. They ruin the whole image.

It happens particularly when the light is coming from behind me and onto the bird. I have been able to some good shots recently at late evening with sun coming from behind the bird; but if I leave it until th sun is low all I get is a silhouette.

Is there any way I can set the camera to adjust for this effect. Are there filters that could resolve this.
