Buying X-E1 in 2017 for $200! Is there anything better?

Hello

My girlfriend tried to learn about photography and as she WILL NOT DO any post processing anyway, I suggest her about Fuji since I heard a lot of stories about OOC JPEG images without post processing.

The drawback here is her budget is not much, since she's still in college. Just less than $500

I've done some research for like 3 days by browsing all day long and I suggest X-E1 to her. The reason:

1. The CPU seems less aggressive to noise reduction at high ISO

2. The image quality is not far (AFAIK, CMIIW) behind other newer camera like X-T10. Don't compare to X-T20 

3. X-Trans sensor compared to X-A entry level series using bayer

Actually I also suggest X-M1 but she said she want to use a viewfinder TO LOOK PROFESSIONAL (how funny is that). But that's it.

I search in the used online store here and find X-E1 and find the price is around $200. Similar with X-A1, X-M1. The question is am I giving her the right choice? I have never use Fuji except for my friend's X-T10 for 1 day street photography.

Do compact camera like X100S or X100T is better for her? I still not doing research about this series, though.

And regarding the lens, since she said she's not interesting in changing lens, maybe we'll get XC 16-50 or XF18-55. I notice 16-50 is a stop behind 18-55 but as for image quality, is it far behind?
